
Ingredients
1/2 tablespoons of vegetable oil or ghee
1 teaspoon ginger finely chopped
1 teaspoon green chili finely chopped
1 tablespoon of cumin seeds or cumin powder
2 small onions finely chopped
2 tomatoes finely chopped
1/4 teaspoon turmeric powder
1 teaspoon red chili powder
1 1/2 teaspoons Garam Masala
1 1/4 teaspoon salt
5 eggs lightly whisked
2 tablespoon fresh coriander chopped
Instructions
Heat the oil or the ghee in a large frying pan.
Add cumin and cook for a couple of minutes.
Add onions, ginger and green chili and stir for about 5 minutes until the onions are somewhat tender.
Add the tomatoes, turmeric powder, red chili, masala and salt; stir well and let simmer under cover on low heat for a couple of minutes.
Add the eggs and simmer on medium heat, whisking to mix them well until the eggs are cooked as preferred.
Taste with salt and black pepper and garnish with finely chopped fresh coriander
Eat warm on toasted bread or with buttered thin bread.
