
Ingredients
500 g mixed millet, red quinoa, buckwheat, amaranth or any groats
1 pot fresh basil
cherry tomatoes, divided
4 green onions in thin rings
1 carrot shredded
Olives, optional variety
200 gr chickpeas
Olive oil and Lemon juice
salt and freshly ground black pepper
1 jar grilled peppers, shredded
1 tablespoon white wine vinegar
150 gr Feta cheese
Boil the groats for about 10 minutes in twice as much water, let stand for 5 minutes and rinse cold.
Add the other ingredients for the salad and mix gently
Crumble the feta cheese over and drizzle lemon juice and oil on
Season with vinegar, salt and pepper and sprinkle with the onion rings
