Millet and quinoa sallad

Ingredients

500 g mixed millet, red quinoa, buckwheat, amaranth or any groats

1 pot fresh basil

cherry tomatoes, divided

4 green onions in thin rings

1 carrot shredded

Olives, optional variety

200 gr chickpeas

Olive oil and Lemon juice

salt and freshly ground black pepper

1 jar grilled peppers, shredded

1 tablespoon white wine vinegar

150 gr Feta cheese



  • Boil the groats for about 10 minutes in twice as much water, let stand for 5 minutes and rinse cold.

  • Add the other ingredients for the salad and mix gently

  • Crumble the feta cheese over and drizzle lemon juice and oil on

  • Season with vinegar, salt and pepper and sprinkle with the onion rings
