A simple but fantastically good pasta dish! You cook the creamy pancetta and tomato sauce while the pasta is cooking. Don't be intimidated by the vodka, it takes the tomato flavor and sauce to a new level! The recipes make 4 servings.

400 gr pasta penne
200 gr diced pancetta (or bacon)
2 garlic cloves, chopped
1 yellow onion, chopped
1 tbsp olive oil
1 dl vodka
4 tbsp tomato puree
2 dl cream
2 dl grated parmesan cheese
parsley, chopped
salt & peppar
Fry onion, garlic in the oil until it gets a little colour.
Add tomato puree and fry for another 5 minutes on medium heat.
Pour in the vodka and let it boil for a minute.
Stir in the cream and let it simmer. Season with salt and pepper.
Cook the penne according to the instructions on the package.
Drain and save 1–2 dl of the pasta water (for 4 servings).
Stir in the pasta. Add a little pasta water at a time until desired consistency.
Top with parmesan and basil. Serve immediately!
