Banana bread

Ingredients

  • 5 ripe bananas, 4 of which are mashed and 1 split lengthwise

  • 100 g room temperature butter

  • 2 dl sugar - 1 dl caster sugar and 1 dl of any type of brown sugar

  • 2 eggs

  • 3 1⁄2 dl wheat flour

  • 1⁄2 tsp gingerbread spice alt. ground cinnamon

  • 1 tsp baking powder

  • 1⁄2 tsp salt

  • 1⁄2 tsp vanilla powder

  • A handful of coarsely chopped walnuts or other nuts, or chopped dark chocolate

  • butter + flour for the mold


How to:

  • Heat the oven to 175°.

  • Grease and bread an oblong bread form.

  • Beat butter and sugar fluffy with an electric beater.

  • Beat the eggs, stir in 4 mashed bananas and then pour the mixture into the butter mixture. Beat to a fluffy batter.

  • Mix all dry ingredients well in a bowl.

  • Stir the dry ingredients into the batter - a little at a time

  • Pour the batter into the mold and top with the split banana, preferably with the cut surface facing up.

  • Bake until the bread is golden brown, about 45 minutes. Turn off the oven and let the bread remain in the afterheat for about 20 minutes until done.

  • Then let cool and serve in thick slices.
