
Ingredients
5 ripe bananas, 4 of which are mashed and 1 split lengthwise
100 g room temperature butter
2 dl sugar - 1 dl caster sugar and 1 dl of any type of brown sugar
2 eggs
3 1⁄2 dl wheat flour
1⁄2 tsp gingerbread spice alt. ground cinnamon
1 tsp baking powder
1⁄2 tsp salt
1⁄2 tsp vanilla powder
A handful of coarsely chopped walnuts or other nuts, or chopped dark chocolate
butter + flour for the mold
How to:
Heat the oven to 175°.
Grease and bread an oblong bread form.
Beat butter and sugar fluffy with an electric beater.
Beat the eggs, stir in 4 mashed bananas and then pour the mixture into the butter mixture. Beat to a fluffy batter.
Mix all dry ingredients well in a bowl.
Stir the dry ingredients into the batter - a little at a time
Pour the batter into the mold and top with the split banana, preferably with the cut surface facing up.
Bake until the bread is golden brown, about 45 minutes. Turn off the oven and let the bread remain in the afterheat for about 20 minutes until done.
Then let cool and serve in thick slices.
