Rhubarb muffins with strawberries

2 organic eggs 1.5 dl sugar 4 dl wheat flour 1 teaspoon baking powder 2 teaspoons vanillin 1 teaspoon cinnamon 125 gr mascarpone ½ dl milk 100 gr white chocolate coarsely chopped 250 gr rhubarb cut into small pieces 1 tablespoon potato flour 12 strawberries halved Muscovado sugar / cane sugar

Preheat the oven to 200 degrees Whisk eggs and sugar until fluffy Melt the butter and let cool Mix the dry ingredients into the egg mixture Add the melted butter, mascarpone and milk Stir well Turn the pieces of in the potato flour Add the rhubarb and chocolate in the batter Click the batter into muffin tins Press down strawberries pieces into each muffin Sprinkle some muscovado sugar on top Bake for 16-20 minutes Let cool and enjoy!
