Vörtbröd (Christmas bread)

Ingredients:

6 dl Porter

75 grams of fresh yeast

100 g margarine or butter

2 dl raisins, chopped

1 dl dark syrup

1 dl honey

approx. 18 dl country bread flour or rye semolina - rågsikt (approx. 1 1/2 kg)

1/2 tablespoon salt

5 orange peels

1 tsp cloves

2 tbsp ginger

How to:

- take out all the ingredients

- boil the orange peel, cut off the white and chop the yellow

- pound the cloves unless ground is used

- melt the butter, pour over port and heat to 37 degrees

- crumble the yeast in a bowl, dissolve it with a little of the liquid

- add the rest of the liquid and all other ingredients

- work the dough shiny and smooth until it releases from the edges of the bowl

- Allow to rise until doubled, under a towel, about 1 hour

- pick up the dough and work it a little, some wheat flour may be needed

- divide the dough into two or three pieces and form into loaves or round buns

- place the bread on a greased baking sheet

- Leave to rise under a cloth for 20 minutes

- Preheat the oven to 225

- Bake the risen loaves in the preheated oven for 30 minutes approx

- try with a needle, it should come out shiny and without smears

- Let the bread to cool on a wire rack under a towel
