To begin your starter:
250 gr wheat flour
200 gr water
1 grated apple or a couple of spoons of honey
To feed your starter:
100 gr wheat flour
100 gr cool water (if your house is warm), or lukewarm water (if your house is cool)
Day 1:
1dl water
1dl wheat flour
Combine in a large glass jar that holds 5-8 dl, stir everything together thoroughly, cover the container loosely.
Let the mixture rest in at warm room temperature.
Day 2:
Mix well, cover, and let the mixture rest at room temperature.
Day 3:
Mix well, cover, and let the mixture rest at room temperature
Day 4:
Add 1 dl flour and 1 dl water, stir well
Feed once in the morning and once in evening

Day 5:
You should now see plenty of bubbles in your sourdough and it should smell fresh but with a pleasant sour/acid aroma.
Feeding a sourdough simply means adding flour and water. A rule of thumb when feeding a sourdough is equal parts water and flour. Store in the fridge and feed once / week or when you are going to bake with it.
Now just get started and bake with your sourdough! When you are going to bake with it, take it out at least 5 hours before and feed it, it should be bubbly and lively when you add it to your dough! The sourdough works just like yeast when you bake bread, starting from 2 dl sourdough per kilo of flour.
