
3 free range eggs
1,5 dl oil or melted butter
2 dl caster sugar
4 dl Flour
1 teaspoon baking power
A pinch of vanilla powder
A handful of chopped walnuts
2 apples cut into small pieces
Work the eggs and sugar with an electric whisk until you get a creamy mixture. Slowly pour in the oil or melted butter. Sift the flour and baking powder and mix well.
Add the walnuts and apples. Mix everything gently.
Now pour the dough into a greased and floured 24 cm mold and bake in the oven at 175 degrees for about 40 minutes. Leave to cool and sprinkle with icing sugar (push a teaspoon of icing sugar through a fine sieve to get a light dusting).
Enjoy with a warm cup of tea.
